Would this affect my appeal to colleges? Medical especially.?

I am currently enrolled in every AP or honors course available to me that could be a benefit, but I'm looking into some extra science courses for my senior year. I want to get into Baylor or a school of similar medical inclination. I've already or will have taken all the required sciences by next year, all honors, and I want to take Medical Microbiology as well as Pathophysiology (they are both half year courses adding up to one credit). Since they aren't AP courses but are more career suited classes I thought it would be a good idea and colleges might like it. Am I correct? In order to take these I must take Gov. & Eco. over the summer at community college. Is it worth it? Or am I just taking these for my pleasure? Please help.
